1/4 c. shortening
1 1/3 c. sugar
2 eggs
1 tsp. vanilla
2 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
1 c. sour cream
11/4 c. mashed bananas (about 3 small / medium bananas )
1/2 c. chopped pecans , walnuts or chocolate chips (if desired )

Cream shortening and sugar until light and fluffy. Add eggs and vanilla, blend thoroughly.
Combine flour, baking powder, soda and salt. Add to creamed mixture alternately with sour cream, beginning and ending with dry ingredients.Add bananas and nuts (if using ), mixing just until blended. Spoon batter into a greased and floured 13 x 9 x 2 or two 9in.round cake pans. Bake at 350* for 30-35 minutes. Cool well and frost.

1 (8 oz.) pkg. cream cheese, softened
1 stick softened butter
1 tsp. vanilla
1 box (1 lb.) powdered sugar
(For chocolate frosting add 1/2 cup un- sweetened baking cocoa )

Beat cream cheese and butter together till thoroughly combined
Add powdered sugar 1 cup at a time beating well after each addition
Add vanilla
This will make enough frosting for 9x13 or a 9in. double layer cake. Store cake covered.
